Lime coconut yogurt cream cheese ice-cream

This was a recipe for a frozen tart, but I use it as ice-cream :) The lime taste is wonderful, very refreshing. It is a perfect match with coconut cream, cream cheese & yogurt :)




Ingredients
240g cream cheese, at room temperature
1 cup sugar

1 cup coconut cream
1/4 cup lime zest
1/2 cup fresh lime juice

240g greek yogurt

Instructions
1. In a mixing bowl, beat cream cheese and sugar until blend well

2. Add in coconut cream, lime zest and lime juice and mix well

3. Add in greek yogurt, mix well

4. 
With Ice-cream machine:
Pour the mixture into ice-cream machine and follow the machine instructions

Without Ice-cream machine:
- Pour the mixture into a shallow mould or container, put in the freezer & let it chill for 1 hour
- After 1 hour, take it out, use a spetula to mix the mixture, put back to freezer & chill for 1 hour
- After 1 hour, take it out, mix with spetula
- Repeat that for 3-4 times, until the mixture become solid but not hard
* If you wait until next day to serve, take it out 30mins before serving

Raspberry ice-cream

Who doesn't love raspberry? It's hot outside, let me make some :)
The taste it really good - a bit acid & a bit sweet.


Ingredients
- frozen raspberry, about 700g
- cream, about 250ml
- icing sugar (you need to taste it...) I used about 150g

Instructions
Mix the ingredients together, TASTE it and put it into the ice-cream machine (follow the instructions of your machine).

Quality control for making ice-cream is important!

Optional: At the end you can add some defrosted raspberries or even the fresh ones, with some almond flakes & the raspberry sauce... yummm!


This is how I ate it - with meringue... because I had some egg whites left in the fridge... :p Sorry, it can be better presented... improvement for next time!

Coconut milk ice-cream with ginger and lime

I have a friend who made this ice-cream for her husband's birthday, she told me that they loved it and she recommended me to make it ;)

My husband said it is one of the best ice-cream I have ever made! I am sure he will want me to make again :)



It was quite time consuming when I grated the ginger by hand (but my effort worths since my husband is happy). 

If you want to make it in hurry, then I suggest you mix all the ingredients in a blender.

Ingredients

113g fresh ginger (peeled)

1 cup brown sugar (original recipe = 1cup & 2tbsp white sugar)

2 (380g-400g) cans chilled unsweetened coconut milk
1 cup chilled half and half (you can use at least 30% cream)
5 tbsp fresh lime juice of about 2 limes
1 tbsp grated lime peel of 2 limes
Pinch of salt

For decoration (I didn't use it)

2 mangoes (peeled, pitted & sliced)
1 lime (thinly sliced)

Instruction

1. Finely grate ginger, then chop very finely. Set aside enough chopped ginger (including juices).


2. Whisk coconut milk, sugar, half and half, lime juice, lime peel, salt, and reserved grated ginger in medium bowl, keep whisking the mixture until sugar dissolves. 

3. Transfer mixture to ice cream maker. Process according to manufacturer's instructions. 

4. Transfer ice cream to container; cover and freeze until firm, about 3 hours.
5. For decoration - garnish with mango and lime.

Note: If you like ginger flavor, you can add more than written in the recipe, but be careful it can become spicy if you add too much!

Ice-cream making - Trial of new taste

I have some whole milk to use up asap, so I bought the 35% cream from the supermarket, freeze my ice-cream bowl and try to make ice-cream.

In the past, I have made different flavors - green tea, black sesame, yam, coconut ginger lime, vanilla, raspberries, coffee, rose... so this time I want to make caramel flavor!

The result is not as strong as I think, may be I should buy caramel extract to strength the taste of caramel!
However, it's wise to add caramelized macadamia & the caramel sauce! It's tasty and chewy!

If I get the portion right, I will share the recipe hehe...

Green tea / Black sesame ice-cream recipe

I bought a package of black sesame powder few days ago in a Chinese supermarket, because I like eating black sesame sweet soup. I tried it when I got home and I was quite disappointed, I followed the instruction to add hot water in the powder, but the taste and texture wasn't what I expected.

Yet, I found another usage of this powder - ice-cream/ mousse...
That is why today I made the ice-cream!


I adapted this recipe from green tea ice-cream... so I will indicate the quantity used of black sesame or green tea or even yam!



Ingredients:
2 cups half-half (can be replaced by 1 cup double cream & 1 cup milk)*
1/2 cup sugar
pinch of salt
4 tbsp Black sesame powder**

* I used 1 cup 35% cream & 1 cup whole milk
**If you want to make green tea ice-cream, add 3 tbsp green tea powder




Instructions:
Before you start, freeze your ice-cream bowl 24hours ahead!

1. Bring all the ingredients in the sauce pan under medium heat, stir it and cook it until the mixture start forming foam with steam (but not boiling)

2. Let it cool down. When it's cool enough, place a plastic wrap right on the mixture - to avoid a layer of skin forms. Then put it in the fridge for 2hours - to ensure the mixture is cool enough

3. Now you can pour the mixture to the ice-cream machine and follow the instructions of your machine
